The drive down Dalmeny Estate is a great talking point for many guests and offers an unforgettable first impression of a quintessentially Scottish venue, Barnbougle Castle. Vast fields dotted with Cheviot sheep and Highland cattle greet guests, emblems of Scotland’s traditional heritage.

These animals aren’t here just for show. Rosebery Estates operates low-input livestock farms, raising cattle and lamb that contribute to the local food supply. These same ingredients often find their way to our event menus, offering guests a delicious farm-to-table dining experience.

Deer management is also part of the estate’s practices, with venison gracing banquet tables as both a delicacy and sustainable choice. This connection to the land ensures that the estate’s natural resources are thoughtfully integrated into everything we do.

Forestry: Our Woodlands Warming Our Venues

Rosebery Estates are home to acres of lush woodlands and forests. Through careful forestry practices, including natural felling and healthy forest management, we ensure the preservation of the landscape for generations to come. The maintenance of these woodlands also provides newly married couples fantastic photo opportunities a mere stone’s throw away from their venue of choice.

The by-products of this stewardship are not wasted—our wood is put to good use! At Dalmeny House, a wood-chip biomass heater provides sustainable heating for the venue, while surplus wood is shared with and sold to the local community.

The Walled Garden and Great British Vermouth

A secret haven within Rosebery Estates, the Walled Garden produces so much more than a beautiful backdrop to intimate events. Many of the flowers used in our venues’ stunning arrangements are grown right here. Cut flowers from the garden are also supplied to local florists through Craigies Farm, meaning locals can have a wee part of Rosebery Estates in their homes.

The garden also supplies botanicals for the estate’s handcrafted Wermod Great British Vermouth. Our signature pour, Wermod Great British Vermouth is enjoyed by many guests at Rosebery Guests, served in a classic martini or simply over ice. And of course, where better to enjoy an aperitif than the place in which it was created?
